Birthday Bash!

Birthday Boy!


Since Dillan's birthday was on a Thursday, we waited until today to celebrate with my family.  We invited my mama and my sisters and their families to come over for lunch.  When I asked Dillan what he wanted for lunch, he insisted on having Ranch Potato and Bacon Soup......yum :)

Here's the recipe.....

Ingredients:
6 strips bacon, crumbled
5 large potatoes, peeled and diced in 1/2" cubes
salt
3 tbsp. powdered Ranch Dressing mix
1 medium onion, chopped
4 cups chicken broth
4 cups milk
pepper
1 cup sour cream
3 tbsp. flour

Fry bacon until crisp. Remove and set aside.  Saute onion in the bacon drippings until softened.  Add potatoes and broth.  Cover and simmer until potatoes are tender (approximately 20 minutes).  Mash approximately half the potatoes in the pot to thicken the soup.  Add milk, salt & pepper (to taste), and Ranch Dressing mix.  Heat through.  Return bacon to pot (crumbled).  Remove soup from heat.  Whisk together sour cream and flour.  Stir sour cream mixture into the soup.  Heat gently to prevent sour cream mixture from separating (do not boil).  Serve with shredded cheese (optional).
