Easy Banana Nut Bread

I love this quick & easy recipe. Here's my secret: let the bananas get VERY RIPE! I mean black and ugly ripe!!! They look gross, but it makes the bread so moist - yummy!
1 c. sugar
1/2 c. melted margarine
2 eggs, slightly beaten
1 tsp. vanilla extract
3 large very ripe bananas, mashed
2 c. self-rising flour
1 c. pecans (optional)
Combine sugar & melted margarine in bowl. Add eggs and vanilla; mix well. Stir in bananas. Fold in flour and pecans; DO NOT BEAT. Spoon into greased 5x9" loaf pan. Bake at 325 for 1 hour or until loaf tests done. Cool in pan for 10 min. Remove to wire rack to cool completely. Let stand, wrapped in plastic wrap or foil overnight before serving. Yields 15-18 servings.
